COGNAC VSOP Appellation: COGNAC V.S.O.P (Very Superior Old Pale)
Age: from 6 to 8 years on average Grape variety / Region: Ugni-Blanc / Fin Bois Vinification : vinification at the estate Capacity: 70cl bottle – 40° Tasting note: Amber colour with rich aromas such as wood, vanilla, apricot, dried fruits and almond. Round flavours, with fruity and toasty notes. Smooth aftertaste, structured with nice hints of typical aromas from the Petite Champagne and Fins Bois regions. Cognac is a brandy that is double distilled from white wine. About 90% of the grapes used are Ugni Blanc. The Cognac producing region is divided into six areas: Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bon Bois, Bois Ordinaires et Bois Communs. The process of distilling cognac has two parts; in the first, a raw eaux-de-vie is produced. In the second, only the heart is saved and the head and tail are either discarded or re-processed. After cask ageing, the eaux de vies are then blended to achieve their differing styles/brands. The age listed on the label is for the youngest spirit used in the Cognac, dating from the year of harvest.
